Ingredients
For the Blackened Catfish:
- 4 catfish fillets (about 6 oz each)
- 2 tbsp paprika

- 1 tsp dried oregano
- 1 tsp black pepper
- 1 tsp salt

For the Gouda Grits:
- 1 cup stone-ground grits
- 4 cups water
- 1 cup shredded gouda cheese
- 2 tbsp unsalted butter
- 1/2 cup heavy cream
- Salt and pepper to taste
For the Cajun Cream Sauce:
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- Prepare the Blackened Seasoning: In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, dried thyme, dried oregano, black pepper, and salt. Mix well to create the blackened spice blend.
- Season the Catfish: Pat dry the catfish fillets with paper towels. Brush both sides lightly with olive oil or melted butter. Sprinkle the blackened seasoning generously over both sides of each fillet, pressing it in slightly to adhere.
- Cook the Catfish: Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat until very hot. Add 2 tablespoons olive oil or butter. Place the seasoned catfish fillets in the pan and cook for about 3-4 minutes per side, until the crust is blackened and the fish flakes easily with a fork. Remove from heat and keep warm.
- Prepare the Gouda Grits: In a medium saucepan, bring 4 cups of water to a boil. Gradually whisk in the grits to prevent lumps. Reduce heat to low and simmer, stirring frequently, until thickened and tender (about 20-25 minutes). Stir in butter, heavy cream, and shredded gouda cheese until melted and creamy. Season with salt and pepper to taste. Keep warm.
- Make the Cajun Cream Sauce: In a small saucepan, heat 1 tablespoon olive oil over medium heat. Add finely chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant. Pour in the heavy cream, smoked paprika, cayenne pepper, salt, and pepper. Simmer gently for 3-5 minutes until slightly thickened. Remove from heat.
- Plate and Serve: Spoon a generous portion of gouda grits onto each plate. Top with a blackened catfish fillet. Drizzle the cajun cream sauce over the fish and grits. Garnish with fresh parsley or green onions if desired. Serve immediately.
