Ingredients
Gummy Base
- 1 cup apple juice
- 1/2 tsp blue spirulina
- 2 1/2 tbsp gelatin
Raspberry Filling
- 6 oz raspberries
- 2 tbsp honey
- 1/4 cup water
- 2 tsp lemon juice
- 1 tsp arrowroot starch
- 1 tsp water (for arrowroot slurry)
Instructions
- Prepare the gummy base: Combine the apple juice and blue spirulina in a pot and whisk well to evenly incorporate the color. Sprinkle the gelatin over the liquid and let it sit for 5 minutes to bloom and harden.
- Heat the gummy mixture: Place the pot on medium-low heat and warm gently for 2-3 minutes until the gelatin dissolves and the mixture returns to a smooth liquid consistency. Remove from heat.
- Mold the base gummies: Using a dropper, fill your chosen gummy mold only halfway with the blue apple juice mixture. Set aside the remaining mixture for later use. Place the mold in the freezer to allow the gummy base to set while you prepare the filling.
- Prepare the raspberry filling: In a separate pot, combine raspberries, honey, and water. Place over medium-low heat and bring to a low simmer. Mash the raspberries carefully with a potato masher or fork until the mixture is mostly liquid. Remove from heat.
- Strain the raspberry juice: Pass the raspberry mixture through a fine mesh strainer into a bowl to remove seeds and pulp, finishing by stirring in the lemon juice to brighten the flavor.
- Thicken the filling: Mix the arrowroot starch with 1 tsp water to form a slurry. Add this to the strained raspberry juice and stir well over low heat until the mixture thickens to a syrupy consistency. Remove from heat.
- Assemble the gummies: Remove the gummy molds from the freezer and carefully fill the cavities with the thickened raspberry filling on top of the set blue base. Return the molds to the freezer to fully set before removing and enjoying.
