- Prepare the Tea Infusion: In a small saucepan, bring 1/2 cup of water to a gentle simmer. Remove from heat and steep the 2 Earl Grey tea bags in the hot water for about 5 minutes until the tea is strongly brewed. Remove the tea bags, squeezing out any excess liquid, and set the tea aside.
- Cook the Blueberries: In a medium saucepan, combine the blueberries, granulated sugar, and lemon juice. Place over medium heat and cook, stirring occasionally, until the berries start to release their juices and the sugar dissolves, about 5-7 minutes.
- Add Tea and Simmer: Pour the brewed Earl Grey tea and vanilla extract into the blueberry mixture. Optionally add butter to reduce foaming. Continue to simmer the mixture on medium-low heat, stirring frequently to prevent sticking, for about 15-20 minutes until the jam thickens and coats the back of a spoon.
- Check Jam Consistency: To test if the jam is set, place a small amount on a chilled plate and let it cool for a minute. Run your finger through it; if the surface wrinkles, the jam is ready. If not, cook for a few more minutes and test again.
- Jar the Jam: Remove the saucepan from heat and let the jam cool slightly. Pour the warm jam into sterilized jars, leaving about 1/4 inch of headspace. Seal with lids and let cool to room temperature. Store in the refrigerator for up to 3 weeks or process in a water bath for longer shelf life.
