Ingredients
Puff Pastry
- 1 sheet of frozen puff pastry, thawed
- 1 tablespoon all-purpose flour (for dusting)
Lemon Cream Filling
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 teaspoon vanilla extract
Topping
- 1/2 cup fresh blueberries
- 1 tablespoon powdered sugar, for dusting
- 1 egg, beaten (for egg wash)
Instructions
- Prepare Puff Pastry: Preheat your oven to 400°F (200°C). Lightly flour a working surface and roll out the puff pastry sheet into a 10×10 inch square to ensure even thickness.
- Cut and Egg Wash: Cut the puff pastry into 4 equal squares. Place them on a parchment-lined baking sheet. Brush the edges of each square with the beaten egg to help them brown and seal during baking.
- Make Lemon Cream Filling: In a medium bowl, beat together the softened cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth and creamy.
- Assemble Pastries: Spoon a generous tablespoon of the lemon cream filling into the center of each puff pastry square, spreading it slightly but leaving an inch border around the edges.
- Bake Pastries: Bake the pastries in the preheated oven for 15-18 minutes or until the puff pastry is golden brown and puffed up around the filling.
- Add Blueberries: Immediately after removing from the oven, top each pastry with fresh blueberries while the lemon cream is still slightly warm to help them set.
- Cool and Dust: Let the pastries cool on the baking sheet for about 10 minutes. Once cooled, dust the tops with powdered sugar for a pretty finish.
- Serve: Serve the pastries slightly warm or at room temperature paired with tea or coffee for a delightful dessert or snack.
Notes
- Use fresh lemon zest and juice for the brightest flavor in the cream filling.
- Ensure the cream cheese is softened for easy mixing and a smooth filling.
- You can substitute blueberries with strawberries or raspberries as desired.
- For a dairy-free version, use a vegan cream cheese alternative.
- To save time, prepare the lemon cream filling ahead and refrigerate before assembly.
