Description

These Blueberry Lemon Cream Pastries combine flaky puff pastry with a luscious lemon cream filling and fresh blueberries, creating a delightful, refreshing dessert perfect for any occasion. Crisp, buttery layers meet a tangy and creamy center, topped with juicy blueberries and a dusting of powdered sugar for a beautiful finish.

Ingredients

Puff Pastry

  • 1 sheet of frozen puff pastry, thawed
  • 1 tablespoon all-purpose flour (for dusting)

Lemon Cream Filling

  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract

Topping

  • 1/2 cup fresh blueberries
  • 1 tablespoon powdered sugar, for dusting
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare Puff Pastry: Preheat your oven to 400°F (200°C). Lightly flour a working surface and roll out the puff pastry sheet into a 10×10 inch square to ensure even thickness.
  2. Cut and Egg Wash: Cut the puff pastry into 4 equal squares. Place them on a parchment-lined baking sheet. Brush the edges of each square with the beaten egg to help them brown and seal during baking.
  3. Make Lemon Cream Filling: In a medium bowl, beat together the softened cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth and creamy.
  4. Assemble Pastries: Spoon a generous tablespoon of the lemon cream filling into the center of each puff pastry square, spreading it slightly but leaving an inch border around the edges.
  5. Bake Pastries: Bake the pastries in the preheated oven for 15-18 minutes or until the puff pastry is golden brown and puffed up around the filling.
  6. Add Blueberries: Immediately after removing from the oven, top each pastry with fresh blueberries while the lemon cream is still slightly warm to help them set.
  7. Cool and Dust: Let the pastries cool on the baking sheet for about 10 minutes. Once cooled, dust the tops with powdered sugar for a pretty finish.
  8. Serve: Serve the pastries slightly warm or at room temperature paired with tea or coffee for a delightful dessert or snack.

Notes

  • Use fresh lemon zest and juice for the brightest flavor in the cream filling.
  • Ensure the cream cheese is softened for easy mixing and a smooth filling.
  • You can substitute blueberries with strawberries or raspberries as desired.
  • For a dairy-free version, use a vegan cream cheese alternative.
  • To save time, prepare the lemon cream filling ahead and refrigerate before assembly.
