Description

This Burrata Salad is a delightful summer side dish inspired by the classic Caprese salad. It features juicy heirloom and cherry tomatoes, fragrant fresh basil and basil pesto, and creamy burrata cheese, all brought together with a simple drizzle of extra-virgin olive oil and a splash of balsamic vinegar. This easy-to-assemble salad shines brightest when tomatoes are at their peak freshness in midsummer, making it perfect for warm-weather gatherings and light meals.

Ingredients

Tomatoes

  • 4 heirloom tomatoes, sliced
  • 2 cups cherry tomatoes, halved

Dressings & Seasonings

  • Extra-virgin olive oil, for drizzling
  • 1 teaspoon balsamic vinegar
  • Flaky sea salt, for sprinkling
  • Freshly ground black pepper, to taste

Cheese & Garnish

  • 8 ounces burrata cheese
  • ⅓ cup basil pesto
  • Fresh basil or mint leaves, for garnish

Instructions

  1. Arrange Tomatoes: Lay the sliced heirloom tomatoes evenly on a large serving platter to create a colorful base.
  2. Toss Cherry Tomatoes: In a medium bowl, combine the halved cherry tomatoes with a drizzle of olive oil, the balsamic vinegar, and pinches of flaky sea salt and freshly ground black pepper. Toss gently to coat the tomatoes evenly.
  3. Add Cherry Tomatoes to Platter: Scatter the seasoned cherry tomatoes over the heirloom tomatoes on the platter, distributing them evenly.
  4. Incorporate Burrata: Tear the burrata cheese into pieces and artfully arrange them on top of the tomatoes. Sprinkle the salad with additional flaky sea salt and several grinds of black pepper to enhance the flavors.
  5. Add Pesto and Olive Oil: Dollop the basil pesto evenly over the salad and drizzle extra virgin olive oil to finish.
  6. Garnish and Serve: Garnish with fresh basil or mint leaves. Adjust seasoning to taste, and serve immediately for the best flavor and texture.

  • Use the freshest, highest-quality tomatoes and burrata for the best flavor.
  • This salad is best enjoyed immediately to preserve the texture of the burrata and freshness of the herbs.

  • Feel free to substitute fresh mint for basil if preferred.
