Ingredients

Butternut Squash Topping

  • 1 garlic clove, minced
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey or maple syrup

Bread and Assembly

  • 1 baguette, sliced into 1/2-inch pieces
  • 2 tablespoons olive oil (for brushing bread)
  • 1/4 cup fresh basil leaves, chopped
  • Optional: 1/4 cup crumbled goat cheese or feta cheese

Instructions

  1. Prepare the Butternut Squash: Preheat your oven to 400°F (200°C). Toss the diced butternut squash with olive oil, thyme, minced garlic, salt, and pepper in a bowl until evenly coated.
  2. Roast the Squash: Spread the squash in a single layer on a baking sheet lined with parchment paper. Roast for 25-30 minutes, turning halfway through, until the squash is tender and caramelized on the edges.
  3. Make the Balsamic Glaze: While the squash roasts, combine balsamic vinegar and honey in a small saucepan. Simmer over medium heat for about 5-7 minutes until reduced by half and slightly syrupy. Remove from heat and let cool.
  4. Prepare the Bread: Brush the baguette slices lightly with olive oil on both sides. Arrange them on a baking sheet and toast in the oven for about 5-7 minutes until golden and crisp.
