Ingredients
- 1/2 medium cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 6 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 bay leaf
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and celery until softened.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in chopped cabbage and cook for a few minutes until slightly wilted.
- Add diced tomatoes, vegetable broth, paprika, salt, black pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
- Remove bay leaf before serving.
- Garnish with fresh parsley and serve hot.

- Add beans or potatoes for a heartier soup.
- Include herbs like thyme or a splash of lemon juice for extra flavor.
