Description

A warm and nourishing cabbage soup made with simple vegetables and comforting flavors, perfect for a light and healthy meal.


Ingredients

  • 1/2 medium cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 6 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 bay leaf
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, carrots, and celery until softened.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in chopped cabbage and cook for a few minutes until slightly wilted.
  5. Add diced tomatoes, vegetable broth, paprika, salt, black pepper, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
  7. Remove bay leaf before serving.
  8. Garnish with fresh parsley and serve hot.
