Banana Split
- 1 banana
- 2 tbsp granulated sugar
- ¾ cup Greek yogurt (any flavor, full or low-fat)
Toppings (optional)
- Granola
- Fresh fruit
- Honey
- Maple syrup
- Jam
- Peanut butter
- Nuts
Instructions
- Prepare the banana: Slice the banana in half lengthwise and sprinkle 2 tablespoons of granulated sugar evenly on the flat side of each banana slice.
- Caramelize the sugar: Using a culinary torch, carefully sweep the flame over the sugar-coated sides until the sugar bubbles and caramelizes to a dark golden brown. Allow the banana slices to cool for 1-2 minutes so the caramelized sugar hardens slightly.
- Assemble the banana split: Place the caramelized banana slices, brûlée side up, on a small plate or oval bowl. Using a spoon or ice cream scoop, add ¾ cup of Greek yogurt on top or alongside the bananas.
- Add toppings and serve: Garnish with your choice of granola, fresh fruit, honey, maple syrup, jam, peanut butter, or nuts. Serve immediately to enjoy the contrast of warm caramelized banana and cool creamy yogurt.

- Use a culinary torch for best caramelization results; an oven broiler may work as a substitute but requires close attention.
