Ingredients
Muffins:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups finely grated carrots (about 3 medium carrots)
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)
Cream Cheese Frosting:
- 4 ounces cream cheese, softened
- 2 tablespoons unsalted butter, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it lightly to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, nutmeg, and ground ginger until well combined.
- Combine Sugars and Wet Ingredients: In a large bowl, beat the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and creamy.
- Add Carrots and Pineapple: Stir the finely grated carrots and drained crushed pineapple into the wet ingredients, mixing until incorporated. Then fold in the chopped nuts and raisins if using.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredients into the wet mixture, gently folding until just combined. Be careful not to overmix to keep the muffins tender.
- Fill Muffin Cups and Bake: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full. Bake in the preheated oven for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
- Cool Muffins: Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely before frosting.
- Prepare Cream Cheese Frosting: In a medium bowl, beat the softened cream cheese and butter until smooth and creamy. Add the powdered sugar, vanilla extract, and ground cinnamon, and beat again until light and fluffy.
- Frost the Muffins: Once the muffins are completely cooled, spread or pipe the cream cheese frosting on top of each muffin.
- Serve and Enjoy: Serve the muffins immediately or store them in an airtight container in the refrigerator for up to 3 days. Bring to room temperature before serving for best flavor.
Notes
- To keep muffins moist, do not overbake.
- You can substitute walnuts with pecans or omit nuts entirely for a nut-free version.
- For a dairy-free frosting, try using vegan cream cheese and butter substitutes.
- Adding pineapple keeps the muffins extra moist and adds natural sweetness.
- Store frosted muffins in the refrigerator, but for unfrosted muffins, room temperature storage for up to 2 days is fine.
