Vegetable Filling
- 2 cups Mixed Vegetables (bell peppers, carrots, zucchini), finely chopped
- 2 cloves Garlic, minced
- 2 tablespoons Olive Oil

Cheese Filling
- ½ cup Cream Cheese, softened
- 1 cup Cheddar Cheese, shredded
- ½ cup Parmesan Cheese, grated

Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to ensure the rolls bake evenly and don’t stick.
- Prepare the Filling: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then add the finely chopped mixed vegetables, seasoning with salt and pepper. Cook for 5-7 minutes until the vegetables are softened. Remove from heat and let the mixture cool slightly.
- Mix the Cheese Filling: In a mixing bowl, combine softened cream cheese, shredded cheddar, and grated Parmesan until smooth and blended evenly. Gently fold the sautéed vegetable mixture into the cheese until fully incorporated.
- Assemble the Rolls: Place one spring roll wrapper on a clean surface with a corner pointing towards you. Spread 2-3 tablespoons of the cheese and vegetable filling near the corner closest to you. Fold the bottom corner over the filling, then fold in both sides and roll up tightly to seal the filling inside. Repeat this process with remaining wrappers and filling.
- Bake the Rolls: Arrange the assembled rolls seam-side down on the prepared baking sheet. Lightly brush the tops with olive oil to promote browning. Bake in the preheated oven for 20-25 minutes or until the rolls are golden brown and crispy on the outside. Once baked, garnish with fresh herbs before serving.
