Ingredients
- 2 puff pastry sheets
- 8 oz mushrooms, finely chopped
- 2 cups fresh spinach
- 4 oz cream cheese, softened
- 2 garlic cloves, minced
- 1 small onion, finely diced
- 1/3 cup Parmesan cheese, grated
- 1 tbsp olive oil
- 1 tbsp butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp Italian seasoning
- 1 egg, beaten
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Heat olive oil and butter in a skillet over medium heat.
- Add the diced onion and garlic, cooking until fragrant and softened.
- Add the mushrooms and cook until soft and golden brown.
- Stir in the spinach and cook until wilted.
- Remove the skillet from the heat and mix in the cream cheese, Parmesan cheese, Italian seasoning, salt, and black pepper.
- Roll out the puff pastry sheets and cut them into small squares.
- Place a spoonful of filling in the center of each pastry square.
- Fold the pastry over and seal the edges with a fork.
- Brush the tops with beaten egg for a golden finish.
- Bake for 18–20 minutes until puffed and golden brown.
- Garnish with fresh parsley before serving.

- Cremini or white mushrooms work best for a rich savory flavor.
- Frozen spinach can be used if thawed and drained well.
- Add cooked chicken or bacon for a heartier filling.
- Feta or mozzarella cheese can be added for extra cheesiness.
