Ingredients

  • 2 puff pastry sheets
  • 8 oz mushrooms, finely chopped
  • 2 cups fresh spinach
  • 4 oz cream cheese, softened
  • 2 garlic cloves, minced
  • 1 small onion, finely diced
  • 1/3 cup Parmesan cheese, grated
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 egg, beaten
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat olive oil and butter in a skillet over medium heat.
  3. Add the diced onion and garlic, cooking until fragrant and softened.
  4. Add the mushrooms and cook until soft and golden brown.
  5. Stir in the spinach and cook until wilted.
  6. Remove the skillet from the heat and mix in the cream cheese, Parmesan cheese, Italian seasoning, salt, and black pepper.
  7. Roll out the puff pastry sheets and cut them into small squares.
  8. Place a spoonful of filling in the center of each pastry square.
  9. Fold the pastry over and seal the edges with a fork.
  10. Brush the tops with beaten egg for a golden finish.
  11. Bake for 18–20 minutes until puffed and golden brown.
  12. Garnish with fresh parsley before serving.

Notes

  • Cremini or white mushrooms work best for a rich savory flavor.
  • Frozen spinach can be used if thawed and drained well.
  • Add cooked chicken or bacon for a heartier filling.
  • Feta or mozzarella cheese can be added for extra cheesiness.
  • Reheat in the oven or air fryer to keep the pastry crispy.
  • Unbaked pastry bites can be frozen and baked directly from frozen.
