Description

Chicken Piccata with Lemon Sauce is a classic Italian-American dish featuring tender, lightly pan-fried chicken breasts served in a tangy, buttery lemon-caper sauce. This recipe highlights the balance of bright citrus and savory flavors, making it a quick and elegant meal perfect for weeknights or special occasions.

Ingredients

For the Chicken

  • 2 large boneless, skinless chicken breasts, halved horizontally to make 4 cutlets
  • Salt and freshly ground black pepper, to taste
  • ½ cup all-purpose flour, for dredging
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter

For the Lemon-Caper Sauce

  • ⅓ cup fresh lemon juice (about 2 lemons)
  • ½ cup dry white wine or chicken broth
  • ¼ cup capers, rinsed and drained
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Chicken: Begin by slicing the chicken breasts horizontally to create four even cutlets. Lightly season both sides of each piece with salt and pepper. Next, dredge each cutlet in all-purpose flour, shaking off any excess to ensure a light coating.
  2. Cook the Chicken: Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Once hot, add the floured chicken cutlets and cook for about 3-4 minutes per side, or until they develop a golden-brown crust and are cooked through. Remove the chicken from the skillet and set aside on a warmed plate.
  3. Make the Lemon-Caper Sauce: In the same skillet, reduce the heat to medium and add the white wine (or chicken broth) to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for about 2 minutes until slightly reduced. Then, stir in the fresh lemon juice, capers, and remaining tablespoon of butter. Allow the sauce to simmer gently for another 1-2 minutes to meld the flavors.
  4. Combine and Finish: Return the cooked chicken cutlets to the skillet, spooning the lemon-caper sauce over them. Let them cook together for an additional minute to warm through and absorb the sauce flavors.
  5. Garnish and Serve: Sprinkle freshly chopped parsley over the chicken and sauce. Serve immediately, ideally with a side of pasta, rice, or steamed vegetables to complement the bright, tangy sauce.

Notes

  • For a gluten-free variation, use gluten-free flour or cornstarch for dredging.
  • Adjust the amount of lemon juice to your taste preference for more or less tartness.
  • White wine can be substituted with extra chicken broth for a non-alcoholic version.
  • Ensure not to overcook the chicken to keep it juicy and tender.
  • This dish pairs well with angel hair pasta, mashed potatoes, or a simple green salad.
