This Chickpea Pizza Crust is a gluten-free, protein-packed alternative to traditional pizza crusts, made with chickpea flour, tapioca starch, and flavorful seasonings. It’s easy to prepare and bakes into a soft yet golden base perfect for your favorite pizza toppings.

Dry Ingredients
- 1 cup chickpea flour
- 2 tablespoons tapioca starch
- 1 teaspoon ground flax seed
- 2 teaspoons Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup grated parmesan cheese
Wet Ingredients
- 2 tablespoons olive oil (divided)
- ¾ cup water
Instructions
- Preheat: Preheat the oven to 400 degrees Fahrenheit and place a 9-inch cast iron pan inside the oven to heat while it preheats.
- Mix Dry Ingredients: In a medium mixing bowl, whisk together the chickpea flour, tapioca starch, ground flax seed, Italian seasoning, salt, and black pepper until combined.
- Add Wet Ingredients: Whisk in the grated parmesan cheese, then slowly add the water and 1 tablespoon of olive oil. Mix thoroughly until the batter is combined and thin in consistency.
- Rest Batter: Let the batter sit for 10 minutes to hydrate the flour and allow the mixture to thicken slightly. After resting, give the batter another good mix.
- Transfer to Pan: Carefully remove the preheated cast iron pan from the oven, transfer the batter into the pan, and drizzle the remaining 1 tablespoon of olive oil over the top.
- Bake: Bake the crust for 12-15 minutes or until it turns lightly golden and has a matte surface. For a crisper crust, bake a few minutes longer.
- Add Toppings: Remove the crust from the oven and add your preferred pizza toppings before baking further or serving.
Notes
- This crust has a softer texture compared to traditional wheat-based pizza crusts. For a crispier crust, extend baking time.
- If you prefer a completely vegan version, omit the parmesan cheese or substitute with a vegan cheese alternative.
- Make sure the cast iron pan is hot before adding the batter for best crust texture.
- Ground flax seed adds nutrition and helps with binding but can be omitted if unavailable.
