This Chocolate Zucchini Cake is a moist and rich dessert that sneaks in the goodness of zucchini for added moisture without compromising on chocolatey flavor. Perfect for a healthy twist on a classic cake, it combines grated zucchini with cocoa powder, sugar, and other simple ingredients to create a delightfully tender crumb and deep chocolate taste.
Ingredients
Dry Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Wet Ingredients
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/4 cups grated zucchini (about 1 medium zucchini)
Optional Toppings
- 1/2 cup mini chocolate chips (optional)
- Powdered sugar for dusting (optional)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan or line it with parchment paper for easy removal.
- Mix Dry Ingredients: In a medium bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, and salt. Set aside.
- Combine Wet Ingredients: In a large bowl, beat the eggs and granulated sugar until light and fluffy. Add the vegetable oil and vanilla extract and mix well.
- Add Zucchini: Stir the grated zucchini into the wet mixture until evenly distributed.
- Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Avoid overmixing to keep the cake tender.
- Add Chocolate Chips: If using, fold in the mini chocolate chips for extra chocolate bursts throughout the cake.
- Bake the Cake: Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely. Dust with powdered sugar if desired before slicing and serving.
Notes
- Be sure to squeeze excess moisture from the grated zucchini if your zucchinis are very watery to avoid a soggy cake.
- You can substitute half the all-purpose flour with whole wheat flour for a healthier version, but this may affect cake texture.
- This cake stores well covered at room temperature for 2 days or refrigerated for up to 5 days.
- For a gluten-free version, use a gluten-free flour blend.
- Adding chopped nuts such as walnuts or pecans can add texture and flavor.
