Ingredients
For the Citrus Ginger Salmon
- 4 salmon fillets (6 oz each)
- 2 tablespoons fresh ginger, grated
- 2 cloves garlic, minced
- 1/4 cup fresh orange juice
- 2 tablespoons fresh lemon juice
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
For the Soba Noodle Salad
- 8 oz soba noodles
- 1 cup cucumber, julienned
- 1/2 cup shredded carrots
- 1/4 cup red bell pepper, thinly sliced
- 2 green onions, sliced
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon toasted sesame oil
- 1 teaspoon honey
- 1 teaspoon sesame seeds, toasted
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Prepare the Marinade: In a small bowl, whisk together grated ginger, minced garlic, orange juice, lemon juice, soy sauce, honey, and olive oil until well combined.
- Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the citrus-ginger marinade over them. Cover and refrigerate for 20-30 minutes to allow the flavors to infuse.
- Cook the Soba Noodles: Bring a large pot of water to a boil. Add soba noodles and cook according to package instructions (approximately 5-7 minutes). Drain and rinse under cold water to stop cooking and set aside.
- Prepare the Salad Dressing: In a small bowl, whisk together rice vinegar, soy sauce, toasted sesame oil, and honey until emulsified.
- Toss the Salad: In a large bowl, combine the cooked soba noodles, cucumber, carrots, red bell pepper, and green onions. Pour the dressing over and toss gently to combine. Sprinkle with toasted sesame seeds and garnish with fresh herbs if desired.
- Cook the Salmon: Heat a large non-stick skillet over medium-high heat. Remove salmon from marinade and season with salt and pepper. Place fillets skin-side down in the skillet and cook for 4-5 minutes until the skin is crispy. Flip and cook another 3-4 minutes until the salmon is cooked through and flakes easily with a fork.
- Serve: Plate the soba noodle salad and top with the citrus ginger salmon fillet. Drizzle any remaining sauce from the pan over the salmon for extra flavor.
