Description

A light and refreshing salad featuring tender shrimp, juicy citrus segments, and creamy avocado, tossed with fresh greens and a zesty lime dressing.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 avocado, diced
  • 1 orange, segmented
  • 1 grapefruit, segmented
  • 4 cups mixed greens
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1-2 tablespoons fresh cilantro or mint

Instructions

  1. Heat a skillet over medium heat with a small amount of olive oil.
  2. Season the shrimp with salt and black pepper, then cook for 2-3 minutes per side until pink and opaque. Set aside to cool slightly.
  3. In a large bowl, combine mixed greens, orange segments, grapefruit segments, diced avocado, and thinly sliced red onion.
  4. In a small bowl, whisk together olive oil, lime juice, salt, and black pepper.
  5. Add the cooked shrimp to the salad.
  6. Drizzle the dressing over the salad and gently toss to combine without mashing the avocado.
  7. Garnish with fresh herbs if desired and serve immediately.

Notes

  • Use pre-cooked shrimp for a quicker preparation.
  • Toss avocado in lime juice to help prevent browning.
  • Swap grapefruit with mandarin oranges for a sweeter flavor.
  • Add cucumber or cherry tomatoes for extra freshness.
  • Best served fresh; store leftovers up to 1 day in the refrigerator.
