Description

Classic Borscht is a traditional Eastern European beet soup that is vibrant, hearty, and packed with deep flavors. This recipe combines beets, cabbage, potatoes, and vegetables simmered to perfection, finished with a dollop of sour cream and fresh dill for an authentic and comforting dish perfect for any season.


Ingredients

Vegetables

  • 4 medium beets, peeled and grated
  • 1 medium onion, chopped
  • 2 medium carrots, grated
  • 3 medium potatoes, peeled and diced
  • 1/2 head green cabbage, shredded
  • 2 cloves garlic, minced
  • 2 medium tomatoes, peeled and chopped or 1/2 cup canned diced tomatoes
  • 1 tablespoon tomato paste

Broth and Seasonings

  • 8 cups beef or vegetable broth
  • 2 tablespoons vegetable oil
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • Salt and freshly ground black pepper, to taste
  • 2 bay leaves
  • Fresh dill, chopped (for garnish)
  • Sour cream (for serving)

Instructions

  1. Prepare the Vegetables: Peel and grate the beets and carrots, chop the onion and garlic, peel and dice potatoes, shred the cabbage, and peel and chop or prepare tomatoes as needed.
  2. Sauté the Aromatics and Beets: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the grated beets and carrots, and cook for an additional 7-10 minutes, stirring occasionally, until the vegetables start to soften.
  3. Add Tomatoes and Tomato Paste: Stir in the chopped tomatoes and tomato paste. Cook for another 5 minutes, allowing the flavors to meld together.
  4. Add Broth and Simmer: Pour in the beef or vegetable broth along with the bay leaves. Bring the mixture to a boil, then reduce the heat to a simmer.
  5. Add Potatoes and Cook: Add the diced potatoes to the pot. Simmer the soup for 15 minutes or until the potatoes are tender.
  6. Add Cabbage and Season: Stir in the shredded cabbage, white vinegar, and sugar. Season with salt and black pepper to taste. Simmer for another 10-15 minutes until the cabbage is cooked but still vibrant.
  7. Finish the Soup: Adjust the seasoning if needed, remove the bay leaves, and turn off the heat.
  8. Serve: Ladle the borscht into bowls and garnish with a spoonful of sour cream and a sprinkle of fresh chopped dill. Serve hot, ideally with rye bread or crusty bread on the side.
