Classic Borscht is a traditional Eastern European beet soup that is vibrant, hearty, and packed with deep flavors. This recipe combines beets, cabbage, potatoes, and vegetables simmered to perfection, finished with a dollop of sour cream and fresh dill for an authentic and comforting dish perfect for any season.

- 4 medium beets, peeled and grated
- 1 medium onion, chopped
- 2 medium carrots, grated
- 3 medium potatoes, peeled and diced
- 1/2 head green cabbage, shredded
- 2 cloves garlic, minced
- 2 medium tomatoes, peeled and chopped or 1/2 cup canned diced tomatoes
- 1 tablespoon tomato paste

- 8 cups beef or vegetable broth
- 2 tablespoons vegetable oil
- 2 tablespoons white vinegar
- 1 tablespoon sugar
- Salt and freshly ground black pepper, to taste
- 2 bay leaves
- Fresh dill, chopped (for garnish)
- Sour cream (for serving)
Instructions
- Prepare the Vegetables: Peel and grate the beets and carrots, chop the onion and garlic, peel and dice potatoes, shred the cabbage, and peel and chop or prepare tomatoes as needed.
- Sauté the Aromatics and Beets: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the grated beets and carrots, and cook for an additional 7-10 minutes, stirring occasionally, until the vegetables start to soften.
- Add Tomatoes and Tomato Paste: Stir in the chopped tomatoes and tomato paste. Cook for another 5 minutes, allowing the flavors to meld together.
- Add Broth and Simmer: Pour in the beef or vegetable broth along with the bay leaves. Bring the mixture to a boil, then reduce the heat to a simmer.
- Add Potatoes and Cook: Add the diced potatoes to the pot. Simmer the soup for 15 minutes or until the potatoes are tender.
- Add Cabbage and Season: Stir in the shredded cabbage, white vinegar, and sugar. Season with salt and black pepper to taste. Simmer for another 10-15 minutes until the cabbage is cooked but still vibrant.
- Finish the Soup: Adjust the seasoning if needed, remove the bay leaves, and turn off the heat.
- Serve: Ladle the borscht into bowls and garnish with a spoonful of sour cream and a sprinkle of fresh chopped dill. Serve hot, ideally with rye bread or crusty bread on the side.

- Beets can be pre-cooked or roasted for deeper flavor before adding, though raw grated beets create a fresher taste.
