Description

Enjoy a healthy and protein-packed breakfast with these easy-to-make copycat Starbucks Egg White Bites. Made with fluffy egg whites, creamy cottage cheese, melted mozzarella, and fresh veggies, this recipe can be prepared quickly and baked to perfection. Perfect for busy mornings, these egg bites are a delicious and convenient alternative to store-bought versions, allowing you to skip the coffee shop and savor a nutritious meal at home.

Ingredients

Egg Mixture

  • 3 cups egg whites
  • 1 cup cottage cheese (2% low fat, such as Good Culture)
  • 1 cup grated mozzarella cheese
  • Salt and pepper to taste

Vegetables

  • 1/4 cup diced roasted or raw red bell pepper
  • 1/4 cup finely chopped spinach

Additional

  • Cooking spray (for silicon molds)
  • Boiling hot water (for water bath)

Instructions

  1. Preheat Oven and Prepare Mold: Preheat the oven to 350°F (175°C). Generously coat a silicone cupcake mold with non-stick cooking spray to prevent sticking and facilitate easy removal of the egg bites.
  2. Prepare Vegetables: Finely chop the roasted or raw red bell pepper and spinach. Set them aside for later use.
  3. Blend Egg Mixture: In a blender, combine the egg whites, cottage cheese, and grated mozzarella cheese. Blend for about 60 seconds to incorporate air and create a bubbly, fluffy texture in the mixture.
  4. Assemble Egg Bites: Place the silicone liner on a baking sheet. Evenly distribute the chopped veggies into each mold cavity. Fill each cavity about three-quarters full with the blended egg white mixture. Sprinkle salt and pepper over the top to taste.
  5. Add Water Bath and Bake: Carefully pour boiling water into the baking sheet, filling it up to about halfway up the sides of the silicone mold liners. This water bath helps distribute heat evenly and keeps the egg bites moist. Bake in the preheated oven for 30 to 35 minutes, or until the tops are firm to the touch.
  6. Cool and Serve: Remove the egg bites from the oven and let them cool for about 5 minutes before gently removing them from the silicone molds. Serve warm and enjoy your homemade Starbucks-style egg white bites.

Notes

  • Using a blender creates a light, fluffy texture by incorporating air bubbles into the mixture.
  • The water bath is key to gentle cooking, preventing the egg bites from drying out and ensuring a creamy interior.
  • Feel free to substitute or add your favorite veggies or cheeses for variety.
  • These egg bites can be stored in the refrigerator for up to 3 days and reheated in the microwave.
  • For a dairy-free version, try using a plant-based cheese alternative and omit cottage cheese.
