- 1/2 medium red onion, finely chopped
- 1/2 cup fresh cilantro, chopped

Dressing Ingredients
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh lime juice (about 2 limes)
- 1 tablespoon red wine vinegar
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 teaspoon honey or agave syrup (optional for sweetness)
Instructions
- Prepare the Vegetables and Beans: Rinse and drain the canned black beans and black-eyed peas thoroughly to remove excess sodium and liquid. If using frozen corn, thaw it. Chop the cherry tomatoes into quarters, dice the red and green bell peppers, finely chop the red onion and cilantro, and finely chop the jalapeño if using.
- Make the Dressing: In a small bowl, whisk together the olive oil, fresh lime juice, red wine vinegar, ground cumin, garlic powder, salt, black pepper, and honey or agave syrup until well combined and emulsified.
- Combine Ingredients: In a large mixing bowl, add the black beans, black-eyed peas, corn, tomatoes, bell peppers, red onion, cilantro, and jalapeño. Pour the dressing over the salad and gently toss everything together until the ingredients are evenly coated with the dressing.
- Chill the Salad: Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate the cowboy caviar for at least 1 hour to allow the flavors to meld and intensify.
