Cheese Mixture

- 1 teaspoon fresh thyme leaves, chopped

Coating
- 1/2 cup dried cranberries, finely chopped
- 1/2 cup toasted pecans, finely chopped
- Fresh thyme sprigs for garnish (optional)
Instructions
- Prepare Cheese Mixture: In a medium bowl, combine the softened goat cheese, honey, chopped fresh thyme, and black pepper. Mix thoroughly until all ingredients are well incorporated and the mixture is smooth.
- Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up the cheese mixture, making it easier to shape.
- Shape the Bites: Using a teaspoon or small cookie scoop, form the cheese mixture into bite-sized balls, about 1 inch in diameter.
- Prepare Coatings: In two separate shallow bowls, place the finely chopped dried cranberries and toasted pecans. Roll each cheese ball first in cranberries, pressing gently so the cranberries adhere, then roll in pecans to coat evenly.
- Chill and Serve: Place the coated cheese bites on a serving platter, cover lightly, and chill for at least 15 minutes before serving. Garnish with fresh thyme sprigs if desired.
