Ingredients
Vegetables
- 1 medium butternut squash (about 2 to 3 pounds), peeled, seeded, and cubed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, peeled and chopped
- 2 celery stalks, chopped
Liquids & Broth
- 4 cups vegetable broth (or chicken broth)
- 1 cup water (optional, for thinning soup)

- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Salt and freshly ground black pepper, to taste

- 2 tablespoons olive oil

Instructions
- Prepare and Roast the Squash: Preheat your oven to 400°F (200°C). Peel and cube the butternut squash, then toss it with 1 tablespoon of olive oil, salt, and pepper. Spread the cubes on a baking sheet in a single layer and roast for about 25-30 minutes or until tender and caramelized, stirring halfway through.
- Sauté Aromatics: While the squash roasts, heat the remaining olive oil and butter in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery; cook until softened and translucent, about 5-7 minutes. Stir in minced garlic and cook for an additional 1 minute until fragrant.
- Add Roasted Squash and Spices: Transfer the roasted butternut squash into the pot with the sautéed vegetables. Sprinkle in cinnamon, nutmeg, and additional salt and pepper to taste. Stir well to combine the flavors.
- Add Broth and Simmer: Pour in vegetable broth and bring the mixture to a boil. Reduce heat to low and let it simmer gently for 15-20 minutes, allowing all the flavors to meld and vegetables to become very soft.
- Blend Soup until Smooth: Remove the pot from heat. Using an immersion blender, blend the soup directly in the pot until smooth and creamy. Alternatively, carefully transfer soup in batches to a blender and puree until velvety. If the soup is too thick, add water or more broth to reach desired consistency.
- Adjust Seasonings and Serve: Taste the soup and adjust seasoning with additional salt, pepper, or spices if desired. Ladle into bowls and garnish with optional fresh herbs, a dollop of Greek yogurt or sour cream, and toasted pumpkin seeds for crunch. Serve hot.
