Seafood

  • 2 cloves garlic, minced

Liquids and Dairy

  • 4 cups seafood stock or fish stock

  • 1 teaspoon paprika

Instructions

  1. Prepare the Base: In a large pot, melt the butter over medium heat. Add the chopped onion, celery, carrot, and garlic, and sauté until the vegetables are soft and translucent, about 5-7 minutes. This step builds the aromatic foundation for the bisque.
  2. Add Liquids and Seasonings: Stir in the tomato paste and cook for 1-2 minutes to deepen the flavor. Then add the white wine, scraping the bottom of the pot to deglaze. Allow the wine to reduce slightly for about 3 minutes. Pour in the seafood stock, add the bay leaf, paprika, cayenne pepper, and a pinch of salt and pepper. Bring the mixture to a simmer.
  3. Simmer the Bisque: Let the soup simmer gently for 20 minutes to meld the flavors, stirring occasionally. Remove the bay leaf after simmering.
  4. Cook the Seafood: Add the shrimp and crab meat to the pot and cook just until the shrimp turn pink and opaque, about 3-4 minutes. Be careful not to overcook the seafood to keep it tender and moist.
  5. Blend the Bisque: Using an immersion blender, carefully puree the soup until smooth and creamy while leaving some small pieces of vegetables for texture. If you do not have an immersion blender, transfer the soup in batches to a blender and puree, then return it to the pot.
  6. Add Cream and Adjust Seasonings: Stir in the heavy cream and heat through over low heat, but do not boil. Taste and adjust the salt, pepper, and cayenne to your preference.
  7. Serve: Ladle the bisque into warm bowls and garnish with chopped fresh parsley. Serve immediately with crusty bread if desired.
