Description

Fettuccine Alfredo is a classic Italian pasta dish featuring tender fettuccine noodles tossed in a rich and creamy sauce made from butter, heavy cream, and Parmesan cheese. This indulgent yet simple meal is perfect for weeknight dinners or special occasions, delivering comforting flavors with a luscious, velvety texture.

Ingredients

For the Pasta

  • 12 ounces fettuccine pasta
  • Salt, for pasta water

For the Alfredo Sauce

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup heavy cream
  • 2 cups freshly grated Parmesan cheese
  • 2 cloves garlic, minced (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions, usually about 10-12 minutes, until al dente. Drain the pasta, reserving about 1/2 cup of the pasta cooking water for thinning the sauce if necessary.
  2. Prepare the Alfredo sauce: In a large skillet over medium heat, melt the butter. If using, add the minced garlic and sauté for about 1 minute until fragrant but not browned. Slowly pour in the heavy cream, stirring continuously, and bring the mixture to a gentle simmer.
  3. Combine cheese and sauce: Remove the skillet from heat and gradually stir in the grated Parmesan cheese until the sauce is smooth and creamy. If the sauce seems too thick, add reserved pasta water a tablespoon at a time until the desired consistency is reached. Season with salt and freshly ground black pepper to taste.
  4. Toss pasta in the sauce: Add the drained fettuccine to the skillet with the Alfredo sauce. Gently toss the pasta to evenly coat each strand with the creamy sauce. Warm over low heat for 1-2 minutes to marry the flavors.
  5. Serve: Transfer the coated fettuccine Alfredo to serving plates or a large serving dish. Garnish with freshly chopped parsley and additional Parmesan cheese if desired. Serve immediately to enjoy the creamy texture at its best.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • Using freshly grated Parmesan cheese is crucial for a smooth sauce; pre-grated cheeses may not melt as well.
  • Add cooked chicken or shrimp to make it a meal with protein.
  • Some prefer adding a pinch of nutmeg to the sauce for depth of flavor.
  • Make sure to serve immediately as the sauce thickens as it cools.
