Ingredients
Chicken Marinade
- 4 boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 4 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Toppings & Garnishes
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Marinate the Chicken: In a medium bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add the chicken breasts and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.
- Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken.
- Prepare the Baking Dish: Lightly grease a baking dish or line it with parchment paper to prevent sticking. Arrange the marinated chicken breasts evenly in the dish.
- Bake the Chicken: Place the baking dish in the preheated oven and bake the chicken breasts for about 20-25 minutes or until the internal temperature reaches 165°F (74°C) and juices run clear.
- Add Tomatoes and Feta: Remove the chicken from the oven and scatter the halved cherry tomatoes and crumbled feta cheese over the top of the chicken breasts.
- Return to Oven: Return the dish to the oven for an additional 5 minutes to allow the feta cheese to soften slightly and the tomatoes to warm.
- Garnish and Serve: Remove from the oven, sprinkle with fresh chopped parsley if desired, and serve warm with your favorite sides such as rice, salad, or roasted vegetables.
Notes
- Marinating the chicken overnight intensifies the flavor.
- For a lower-fat option, use reduced-fat feta cheese.
- Add olives or red onion slices for extra Mediterranean flair.
- Make sure not to overcook the chicken to keep it tender and juicy.
