Ingredients
Beef Mixture
- 1 lb ground beef (lean, 90% lean)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Sauce
- 1 cup low-fat cream cheese
- 1/2 cup low-fat milk
- 1/4 cup grated Parmesan cheese
- 1/2 tsp dried Italian herbs (basil, oregano)
- Salt and pepper to taste
Pasta
- 8 oz whole wheat penne pasta
- Water and salt for boiling
Optional Garnish
- Chopped fresh parsley
- Additional Parmesan cheese
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the whole wheat penne pasta and cook according to package instructions until al dente, about 9-11 minutes. Drain and set aside.
- Sauté the aromatics and beef: Heat olive oil in a large skillet over medium heat. Add finely chopped onion and minced garlic and sauté until fragrant and translucent, about 3-4 minutes. Add ground beef, season with salt and black pepper, and cook until browned through, breaking apart with a spoon, about 7-8 minutes.
- Prepare the creamy sauce: Reduce heat to low. Stir in the cream cheese and milk to the cooked beef mixture. Stir continuously until the cream cheese melts completely and a smooth sauce forms. Add grated Parmesan cheese and dried Italian herbs, mixing well. Adjust seasoning with salt and pepper as needed.
- Combine pasta and sauce: Add the drained pasta to the skillet with the creamy beef sauce. Toss gently to coat the pasta evenly with the sauce, warming through for 2-3 minutes.
- Serve: Divide the creamy high protein beef pasta onto plates. Garnish with chopped fresh parsley and extra Parmesan cheese if desired. Serve hot for the best flavor and texture.
Notes
- Use lean ground beef to reduce fat content while maintaining protein.
- Whole wheat pasta adds extra fiber and nutrients compared to regular pasta.
- For a dairy-free option, substitute cream cheese and milk with plant-based alternatives.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
- Reheat gently on the stovetop or microwave to avoid sauce separation.
