Instructions

  1. Prepare the crust: In a large mixing bowl, combine the flour and salt. Cut in the cold butter using a pastry blender or two knives until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, tossing with a fork until the dough holds together when pressed.
  2. Chill and roll out dough: Shape the dough into a disk, wrap it in plastic, and refrigerate for at least 30 minutes. On a lightly floured surface, roll the dough into a 12-inch circle to fit a 9-inch pie plate. Transfer it to the plate, trim the edges, and flute as desired.
