- 3 large leeks, white and light green parts only, cleaned and sliced

- 1 cup heavy cream or milk

Instructions
- Prepare the Vegetables: Begin by cleaning the leeks thoroughly to remove any dirt, then slice the white and light green parts thinly. Chop the onions and peel and dice the potatoes into uniform pieces for even cooking.
- Sauté the Aromatics: In a large pot over medium heat, melt the butter. Add the leeks, onions, and garlic, cooking gently until they become soft and translucent, about 8-10 minutes, being careful not to brown them.
- Add Potatoes and Liquid: Add the diced potatoes to the pot followed by the broth and water. Optionally add a sprig of thyme or a bay leaf for extra flavor. Bring the mixture to a boil, then reduce heat to maintain a simmer.
- Simmer the Soup: Allow the soup to simmer gently for about 20-25 minutes or until the potatoes are very tender when pierced with a fork.
- Blend the Soup: Remove the thyme or bay leaf if used. Using an immersion blender, blend the soup directly in the pot until smooth and creamy. Alternatively, transfer the soup in batches to a countertop blender and puree until smooth, then return to the pot.
- Add Cream and Season: Stir in the cream or milk, and season the soup with salt and freshly ground black pepper to taste. Warm through gently without boiling.
- Serve: Ladle the hot soup into bowls and garnish with chopped fresh chives or parsley if desired. Serve immediately with crusty bread on the side.
