Description

This Creamy Lobster Corn Chowder with Cheesy Toasts is a luxurious and comforting soup perfect for seafood lovers. The chowder features tender lobster meat and sweet corn in a rich, creamy broth enhanced by aromatic vegetables and herbs. Served alongside crispy, golden toasted bread topped with melted cheese, this dish balances heartiness with elegance, making it an ideal starter or main course for special occasions or a cozy night in.

Ingredients

For the Chowder

  • 1 1/2 pounds cooked lobster meat, chopped
  • 4 cups fresh or frozen corn kernels
  • 4 cups seafood stock or clam juice
  • 2 cups heavy cream
  • 1 large onion, finely chopped
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 4 slices bacon, chopped
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon fresh thyme leaves
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

For the Cheesy Toasts

  • 8 slices of crusty bread (such as baguette or sourdough)
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon garlic powder

Instructions

  1. Prepare the bacon: In a large pot or Dutch oven over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.
  2. Sauté the aromatics: Add the butter to the bacon fat and melt over medium heat. Stir in the chopped onion, celery, and garlic. Cook until the vegetables are softened and fragrant, about 5 minutes.
  3. Create the roux: Sprinkle the flour over the cooked vegetables and stir continuously for 2-3 minutes to cook out the raw flour taste.
  4. Add liquids and potatoes: Gradually whisk in the seafood stock, ensuring no lumps form. Add the diced potatoes and bring the mixture to a simmer. Cook until the potatoes are tender, about 15 minutes.
  5. Cook the corn and cream: Stir in the corn kernels and heavy cream. Continue to simmer gently for another 5-7 minutes until heated through and slightly thickened.
  6. Finish the chowder: Add the cooked lobster meat, crispy bacon pieces, fresh thyme, salt, and pepper. Heat the chowder just until the lobster is warmed through, about 3-4 minutes, taking care not to overcook the lobster.
  7. Prepare the cheesy toasts: While the chowder simmers, preheat the oven to 375°F (190°C). Butter each slice of bread and sprinkle with garlic powder, then top with shredded cheddar cheese. Arrange the toasts on a baking sheet and bake until the cheese is melted and bubbly, about 8-10 minutes.
  8. Serve: Ladle the chowder into bowls, garnish with chopped fresh parsley, and serve with the warm cheesy toasts on the side.

Notes

  • Use fresh lobster meat if possible for the best flavor; cooked lobster tails or claw meat can be used.
  • Seafood stock can be substituted with clam juice or vegetable broth if preferred.
  • For a lighter version, replace heavy cream with half-and-half or whole milk but expect a slightly less creamy texture.
  • Cheesy toasts can be made ahead and reheated briefly before serving.
  • Adjust seasoning according to taste, especially salt, since seafood stock and bacon already add saltiness.
