Instructions
- Boil the Eggs: Place eggs in a single layer in a saucepan and cover with water by 1 inch. Bring to a boil over high heat. Once boiling, cover and remove from heat. Let eggs sit for 10-12 minutes for hard boiling.
- Cool and Peel: Transfer eggs to a bowl of ice water and let cool for at least 5 minutes. Carefully peel the eggs and slice them in half lengthwise.
- Prepare the Filling: Remove the yolks and place them in a medium bowl. Mash yolks with a fork until smooth. Add mayonnaise, Dijon mustard, garlic powder, onion powder, salt, pepper, and smoked paprika. Mix until creamy and fully combined.
- Color the Filling: To create the pumpkin color, mix in additional smoked paprika until the filling reaches a vibrant orange hue.
- Fill the Egg Whites: Using a spoon or piping bag, fill each egg white half with the pumpkin-colored yolk mixture, mounding slightly on top to create a rounded shape.
- Create Pumpkin Ridges: Use the back of a fork or a toothpick to gently press shallow grooves around each filled egg to mimic pumpkin ridges.
- Garnish: Place a small piece of chive or green onion in the center top of each deviled egg to resemble a pumpkin stem. Dust lightly with additional paprika for a finishing touch.
- Chill and Serve: Refrigerate the deviled eggs for at least 30 minutes before serving to allow flavors to meld and filling to set.
