Description

This classic Southern Smothered Chicken with Gravy is a comforting and flavorful dish featuring tender, pan-fried chicken breasts cooked in a rich, savory onion gravy. Perfect for a hearty home-cooked meal, this recipe combines crispy seared chicken with a creamy, aromatic gravy made from chicken drippings, onions, and a touch of broth and cream. Serve it over mashed potatoes or rice for a truly satisfying dinner.

Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 2 teaspoons garlic powder
  • 2 tablespoons vegetable oil
  • 2 tablespoons unsalted butter

For the Gravy

  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Chicken: Season the chicken breasts well with salt, pepper, paprika, and garlic powder. In a shallow dish, dredge each chicken breast thoroughly in flour, shaking off the excess. This will create a crispy coating when cooked.
  2. Sear the Chicken: Heat the vegetable oil and butter in a large skillet over medium heat. Once hot, add the chicken breasts and sear for about 5-7 minutes on each side, or until they’re golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate, covering loosely with foil to keep warm.
  3. Cook the Onions and Garlic: In the same skillet, add the sliced onions. Cook over medium heat, stirring occasionally, until onions are soft and caramelized, about 8-10 minutes. Add the minced garlic and cook for an additional minute until fragrant, careful not to burn.
  4. Make the Gravy: Sprinkle the flour over the cooked onions and garlic, stirring constantly for 1-2 minutes to cook out the raw flour taste. Gradually whisk in the chicken broth, scraping any browned bits from the bottom of the skillet to add flavor. Bring the mixture to a gentle simmer, allowing it to thicken, about 3-5 minutes.
  5. Finish the Gravy: Stir in the heavy cream and season the gravy with salt and pepper to taste. Let it cook for another 2 minutes until the gravy is creamy and smooth.
  6. Combine and Serve: Return the chicken breasts to the skillet and spoon the gravy and onions over the top. Let the chicken simmer in the gravy for another 3 minutes to meld the flavors and warm through. Garnish with chopped fresh parsley if desired and serve hot over mashed potatoes, rice, or your preferred side.

Notes

  • For extra flavor, marinate the chicken in buttermilk for 1 hour before dredging for a juicier result.
  • If you prefer a thicker gravy, add an additional tablespoon of flour during the gravy step, or simmer longer to reduce.
  • Can be made gluten-free by using gluten-free flour or cornstarch as a thickener.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat nicely on the stovetop or microwave.
