This dish combines the perfect balance of tender, juicy salmon with a vibrant, herb-infused cream sauce, ideal for a comforting yet elegant meal.
Ingredients
Salmon
- 4 salmon fillets (6 oz each), skin removed
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
Creamy Tuscan Sauce
- 3 tablespoons butter
- 5 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup baby spinach leaves
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Prepare the Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and freshly ground black pepper for enhanced flavor.
- Sear the Salmon: Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for 4-5 minutes per side, until golden brown and cooked through. Remove salmon from the skillet and set aside.
- Sauté Garlic and Sun-Dried Tomatoes: In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant. Add chopped sun-dried tomatoes and cook for another 2 minutes to release their flavors.
- Add Spinach and Cream: Stir in the baby spinach and cook until wilted, about 1-2 minutes. Pour in the heavy cream, stirring to combine all ingredients smoothly.
- Incorporate Cheese and Seasonings: Add the grated Parmesan cheese, Italian seasoning, and crushed red pepper flakes if using. Stir continuously until the sauce thickens slightly and becomes creamy, about 3-4 minutes.
- Return Salmon to Skillet: Place the seared salmon fillets back into the skillet, spooning some of the sauce over each piece. Simmer together for 2-3 minutes to meld the flavors and warm the salmon through.
- Garnish and Serve: Sprinkle chopped fresh parsley over the dish before serving. Serve the creamy Tuscan garlic salmon immediately, ideally with a side of steamed vegetables or over pasta or rice for a complete meal.
Notes
- You can substitute heavy cream with half-and-half for a lighter sauce, but the texture will be less rich.
- Fresh spinach can be replaced with kale or Swiss chard if preferred.
- Sun-dried tomatoes packed in oil provide the best flavor, but dry-packed tomatoes rehydrated in warm water work as well.
- Be careful not to overcook the salmon to maintain its moist and tender texture.
- Adding a squeeze of fresh lemon juice before serving brightens the flavors perfectly.
