Ingredients

Vegetables and Aromatics

Instructions

  1. Prepare the Beans: If using dried beans, rinse them and soak overnight in plenty of water. Drain and rinse before cooking. If using canned beans, drain and rinse thoroughly.
  2. Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, sautéing until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Add Herbs and Beans: Stir in the rosemary, thyme, and soaked or canned white beans. Cook for 1-2 minutes to combine the flavors.
  4. Add Broth and Simmer: Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low, cover, and let it simmer gently for about 1 to 1.5 hours if using dried beans until the beans are tender. If using canned beans, simmer for 20-30 minutes to meld flavors.
  5. Adjust Texture: Use an immersion blender to blend part of the soup until slightly creamy, or transfer a portion of the soup to a blender and blend, then return to the pot. Add water if the soup is too thick. Season with salt, pepper, and optional red pepper flakes to taste.
