Description

Ingredients

  • 2 chicken breasts, pounded thin
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup olive oil or oil for frying
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, sliced or shredded
  • 23 sandwich rolls or buns
  • Fresh basil (optional)

Instructions

  1. Prepare a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with parmesan cheese, salt, pepper, and garlic powder.
  2. Dredge each chicken piece in flour, dip into the eggs, then coat thoroughly in the breadcrumb mixture.
  3. Heat oil in a skillet over medium heat and fry the chicken until golden brown and crispy on both sides.
  4. Transfer the fried chicken to a paper towel-lined plate to drain excess oil.
  5. Spoon marinara sauce over each piece of chicken and top with mozzarella cheese.
  6. Place under a broiler or in the oven until the cheese is melted and bubbly.
  7. Lightly toast the sandwich rolls.
  8. Assemble the sandwich by placing the chicken inside the rolls and adding fresh basil if desired.
