Ingredients
- 2 chicken breasts, pounded thin
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 cup olive oil or oil for frying
- 1 cup marinara sauce
- 1 cup mozzarella cheese, sliced or shredded
- 2–3 sandwich rolls or buns
- Fresh basil (optional)
Instructions
- Prepare a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with parmesan cheese, salt, pepper, and garlic powder.
- Dredge each chicken piece in flour, dip into the eggs, then coat thoroughly in the breadcrumb mixture.
- Heat oil in a skillet over medium heat and fry the chicken until golden brown and crispy on both sides.
- Transfer the fried chicken to a paper towel-lined plate to drain excess oil.
- Spoon marinara sauce over each piece of chicken and top with mozzarella cheese.
- Place under a broiler or in the oven until the cheese is melted and bubbly.
- Lightly toast the sandwich rolls.
- Assemble the sandwich by placing the chicken inside the rolls and adding fresh basil if desired.
- Serve immediately while warm and crispy.

- For a lighter version, bake or air fry the chicken instead of frying.
