Falafel
- 1 cup dried chickpeas (soaked overnight)

Sandwich Assembly

- 1 cup shredded lettuce
- 1 large tomato, sliced

- 1/4 red onion, thinly sliced
- 1/2 cup tahini sauce (tahini, lemon juice, garlic, water, salt)
Instructions
- Prepare the Chickpeas: Soak the dried chickpeas in water overnight to soften. Drain thoroughly before processing.
- Make Falafel Mixture: In a food processor, combine soaked chickpeas, chopped onion, garlic, parsley, cilantro, cumin, coriander, cayenne, salt, and baking powder. Pulse until you achieve a coarse, grainy mixture but not a paste. Transfer to a bowl and stir in the flour. Refrigerate for 30 minutes to firm up.
- Form Falafel Balls: Using your hands or a small ice cream scoop, form the mixture into small balls or patties about 1.5 inches in diameter.
- Fry the Falafel: Heat about 2 inches of vegetable oil in a deep pan to 350°F (175°C). Carefully add falafel balls in batches, frying for about 3-4 minutes each side until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
- Prepare the Tahini Sauce: In a bowl, whisk together tahini, lemon juice, minced garlic, water, and salt until smooth and creamy, adjusting water for desired consistency.
- Assemble the Sandwiches: Cut open the warmed pita breads to form pockets. Spread tahini sauce inside, add a few falafel patties, then fill with shredded lettuce, tomato slices, cucumber, and red onion.
- Serve: Serve the falafel sandwiches immediately while warm, optionally with extra tahini sauce or hot sauce on the side.
