Ingredients
Dry Ingredients
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp cayenne pepper
Wet Ingredients
- 1/2 cup buttermilk
- 1 large egg, beaten
Additional Ingredients
- 1 cup cooked and chopped crawfish tails
- 2 green onions, finely chopped
- Vegetable oil, for frying
Instructions
- Prepare Dry Ingredients: In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, baking soda, salt, onion powder, garlic powder, and cayenne pepper. Whisk them together to distribute the spices evenly.
- Prepare Wet Ingredients: In a separate bowl, whisk together the buttermilk and beaten egg until fully blended.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid overmixing to keep the hushpuppies light and fluffy.
- Fold in Crawfish and Onions: Carefully fold in the cooked, chopped crawfish tails and finely chopped green onions, evenly distributing them throughout the batter.
- Heat Oil: Pour vegetable oil into a deep skillet or Dutch oven to a depth of about 2-3 inches. Heat the oil to 350°F (175°C), using a thermometer to monitor temperature for optimal frying.
- Fry Hushpuppies: Using a spoon or small scoop, drop spoonfuls of batter gently into the hot oil, making sure not to overcrowd the pan. Fry the hushpuppies until they turn golden brown and crispy on all sides, approximately 3-4 minutes per batch.
- Drain and Serve: Use a slotted spoon to remove the hushpuppies from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce and suggested pairings such as coleslaw or tartar sauce.
Notes
- Maintain the oil temperature between 350°F and 360°F to ensure even cooking without absorbing excess oil.
- Do not overcrowd the frying pan to keep the oil temperature stable and avoid soggy hushpuppies.
- For extra flavor, consider adding a pinch of smoked paprika or chopped jalapeños to the batter.
- Use fresh crawfish tails if possible, but frozen, cooked crawfish tails can also be substituted.
