Ingredients
Salad
- 1 cup cooked rice (preferably jasmine or basmati), cooled

- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced almonds, toasted
Dressing
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon grated fresh ginger
- 1 small garlic clove, minced
For Toasting Rice
- 1 tablespoon vegetable oil or neutral oil

Instructions
- Prepare the Rice: Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add the cooked and cooled rice, spreading it evenly, and let it cook without stirring for about 5 minutes until the bottom becomes crispy and golden. Then stir and cook for another 2-3 minutes until more of the rice is crispy. This step gives the rice a delightful crunch.
- Make the Dressing: In a small bowl, whisk together lime juice, soy sauce, rice vinegar, honey, toasted sesame oil, grated ginger, and minced garlic until well combined and smooth.
- Assemble the Salad: In a large bowl, combine the toasted crispy rice, shredded carrots, chopped cucumber, red bell pepper, green onions, and fresh cilantro. Pour the dressing over and toss gently to coat all ingredients evenly.
- Add Final Touches: Sprinkle the toasted sliced almonds over the salad for extra crunch and nutty flavor. Adjust salt if needed, and serve immediately to enjoy the crispy texture.
