Description

Crispy Turkey Reuben Bites with Sauerkraut and Swiss cheese offer a delightful, bite-sized twist on the classic Reuben sandwich. These golden, crispy appetizers combine savory turkey, tangy sauerkraut, and melted Swiss cheese, all wrapped in a flaky outer crust, perfect for parties or a flavorful snack.

Ingredients

For the Turkey Reuben Bites

  • 8 oz thinly sliced turkey breast
  • 1 cup sauerkraut, well drained
  • 1 cup shredded Swiss cheese
  • 1 package wonton wrappers (about 50 wrappers)
  • 2 tbsp unsalted butter, melted
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper

For the Russian Dressing (Optional)

  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp prepared horseradish
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Russian Dressing: In a small bowl, mix mayonnaise, ketchup, horseradish, Worcestershire sauce, smoked paprika, salt, and pepper until smooth. Refrigerate until ready to serve.
  2. Preheat Oven and Prepare Filling: Preheat your oven to 375°F (190°C). In a bowl, combine shredded turkey, well-drained sauerkraut, shredded Swiss cheese, garlic powder, and black pepper. Mix gently to combine evenly.
  3. Assemble the Bites: Place a wonton wrapper on a clean work surface. Brush edges lightly with melted butter. Add about 1 tablespoon of the turkey-sauerkraut-cheese mixture in the center. Fold the wrapper into a triangle or a pouch, pressing edges firmly to seal and prevent leaking.
  4. Bake the Bites: Place assembled bites on a baking sheet lined with parchment paper. Brush the tops with additional melted butter to ensure crispness. Bake in the preheated oven for 12-15 minutes or until golden brown and crispy.
  5. Serve: Remove from oven and let cool slightly. Serve warm with the prepared Russian dressing for dipping, if desired.

Notes

  • Ensure sauerkraut is well drained to avoid soggy bites.
  • Wonton wrappers can be found in the refrigerated section of most Asian markets or grocery stores.
  • For extra crispiness, you can lightly spray the assembled bites with cooking spray before baking.
  • These bites can be prepared ahead of time and baked just before serving.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated in the oven for best results.
