Description

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 4 large eggs

For the Cream Cheese Frosting:

  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and prepare pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. Mix dry ingredients: In a large bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. Beat wet ingredients and sugars: In another large bowl, beat the eggs, granulated sugar, and brown sugar until light and fluffy. Gradually add the vegetable oil and vanilla extract, mixing well.
  4. Combine wet and dry mixtures: Slowly add the dry ingredients into the wet mixture, stirring just until combined. Avoid overmixing to keep the cake tender.
  5. Add carrots, pineapple, and nuts: Fold in the grated carrots, drained crushed pineapple, and nuts if using, ensuring they are evenly distributed throughout the batter.
