Description
This Deep Healing Mushroom, Kombu & Vegetable Mineral Broth is a nourishing, umami-rich broth packed with minerals and vitamins from a combination of dried mushrooms, kombu seaweed, and fresh vegetables. Perfect as a restorative tonic or a base for soups, this broth supports immune health and provides a deep, savory flavor with every sip.
Ingredients
Dried Ingredients
- 1 cup dried mixed mushrooms (shiitake, maitake, porcini)
- 1 large piece kombu seaweed (about 4 inches)
- 2 dried shiitake mushrooms
Fresh Vegetables
- 1 medium onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, smashed
- 1 small leek, cleaned and chopped
Herbs & Spices
- 2 sprigs fresh thyme
- 1 bay leaf
- 5 black peppercorns
Liquids
- 12 cups filtered water
Instructions
- Prepare Ingredients: Rinse the kombu briefly under cold water to remove excess salt but do not over-wash as you want to retain its minerals. Rinse the dried mushrooms to remove any grit and soak them in warm water for about 20 minutes to rehydrate.
- Combine Ingredients: In a large stockpot, add 12 cups of filtered water along with the soaked mushrooms (reserve soaking liquid), kombu, quartered onion, chopped carrots, celery, leek, garlic cloves, thyme, bay leaf, and black peppercorns. Pour in the reserved mushroom soaking liquid, carefully avoiding sediment at the bottom.
- Simmer the Broth: Bring the mixture to a gentle simmer over medium heat. Once simmering, immediately reduce the heat to low and let it simmer very gently for 2 to 3 hours. Avoid boiling to preserve the delicate flavors and nutrients.
- Remove Kombu: After 45 minutes to 1 hour, carefully remove the kombu from the pot to prevent bitterness.
- Strain the Broth: After simmering, remove the pot from heat and strain the broth through a fine-mesh sieve or cheesecloth into a large bowl or clean pot to remove all solids.
- Cool and Store: Allow the broth to cool to room temperature, then transfer it to airtight containers. Refrigerate for up to 5 days or freeze for up to 3 months.
- Serve: Reheat gently and enjoy as a mineral-rich beverage or use as a flavorful base for soups, stews, and sauces.
Notes
- Do not boil the broth to maintain the integrity of minerals and delicate mushroom flavors.
- Removing the kombu early prevents the broth from becoming overly bitter or slimy.
- Use filtered water to keep the broth pure and clean-tasting.
- This broth can be frozen in ice cube trays for convenient portioning.
- For added richness, you can roast the vegetables before simmering, but this is optional.
