Ingredients
For the Chicken Kebabs
- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Wooden or metal skewers (if wooden, soaked in water for 30 minutes)
For Serving (Optional)
- Chopped fresh parsley
- Lemon wedges
- Greek yogurt or tzatziki sauce
Instructions
- Prepare the Marinade: In a medium bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, paprika, salt, and black pepper. Whisk together until well mixed to create the marinade.
- Marinate the Chicken: Add the cubed chicken breast to the marinade. Toss thoroughly to coat all pieces evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
- Preheat the Air Fryer: Set your air fryer to 400°F (200°C) and allow it to preheat for 3-5 minutes.
- Assemble the Kebabs: Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece to ensure even cooking.
- Cook the Kebabs: Place the skewers in the air fryer basket in a single layer. Air fry at 400°F for 10-12 minutes, turning once halfway through cooking, until the chicken is cooked through and has a slight crisp on the edges.
- Check for Doneness: Verify the internal temperature of the chicken reaches 165°F (74°C) using a meat thermometer to ensure safety.
- Serve: Remove the kebabs from the air fryer and let them rest for a couple of minutes. Garnish with chopped parsley and serve with lemon wedges and your favorite Greek yogurt or tzatziki sauce.
Notes
- Soak wooden skewers in water for 30 minutes before threading to prevent burning in the air fryer.
- Marinating longer enhances the flavor but avoid exceeding 4 hours to prevent texture changes in the chicken.
- Cooking time may vary slightly depending on air fryer model and size of chicken pieces.
- Can be served over rice, salad, or in pita bread for a complete meal.
