Description

This Delicious and Easy Chicken Fajita Casserole combines tender chicken breast, sautéed bell peppers, onions, and vibrant fajita seasonings baked into a cheesy, comforting casserole dish. Perfect for a quick weeknight dinner, this recipe is flavorful, family-friendly, and easy to prepare.

Ingredients

Main Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 cup cooked rice
  • 2 tablespoons olive oil
  • 1 packet (1 tablespoon) fajita seasoning mix
  • 1/2 cup sour cream
  • Salt and pepper, to taste

Instructions

  1. Prepare Vegetables: Slice the bell peppers and onion into thin strips for even sautéing and flavor blending.
  2. Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add sliced peppers and onions, sautéing until they are tender and slightly caramelized, about 5-7 minutes. Season with half of the fajita seasoning mix, salt, and pepper.
  3. Mix Ingredients: In a large mixing bowl, combine the cooked chicken, sautéed vegetables, cooked rice, drained diced tomatoes with green chilies, sour cream, remaining fajita seasoning, and half of the shredded cheeses. Stir until all ingredients are evenly mixed.
  4. Assemble Casserole: Preheat the oven to 375°F (190°C). Transfer the mixture into a greased 9×13 inch baking dish and spread it evenly.
  5. Add Cheese Topping: Sprinkle the remaining shredded cheddar and Monterey Jack cheeses evenly over the top of the casserole.
  6. Bake: Place the casserole in the preheated oven and bake uncovered for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden on top.
  7. Serve: Remove from oven and allow to cool for 5 minutes before serving. Garnish with optional fresh cilantro or sliced green onions if desired.

Notes

  • You can substitute cooked quinoa or cauliflower rice instead of white rice for a healthier variation.
  • Use rotisserie chicken for a quick prep time.
  • Adjust fajita seasoning to taste or use homemade seasoning for less sodium.
  • Optional toppings include sliced jalapeños, avocado, or a dollop of sour cream.
  • Leftovers store well in an airtight container in the fridge for up to 3 days.
