Kabob Rolls are a delicious and flavorful twist on traditional kabobs, featuring spiced ground meat wrapped in flatbread with fresh vegetables and herbs. Perfect as a hearty lunch or dinner, these rolls combine the smoky aroma of grilled meat with the soft texture of flatbread, making them a satisfying and portable meal.
Ingredients
For the Kabob Meat:
- 500g ground lamb or beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground paprika
- 1/4 tsp cayenne pepper
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley
For the Rolls:
- 4 flatbreads or lavash
- 1 cup shredded lettuce
- 1 medium tomato, thinly sliced
- 1 small cucumber, thinly sliced
- 1/4 cup sliced red onions
- 1/2 cup plain yogurt or garlic sauce
Instructions
- Prepare the Kabob Meat: In a large bowl, combine ground meat, chopped onion, garlic, cumin, coriander, paprika, cayenne pepper, salt, pepper, and parsley. Mix thoroughly until all ingredients are well incorporated.
- Shape the Kabobs: Divide the mixture into 4 equal portions. Shape each portion into long, thin sausages around metal or wooden skewers. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
- Grill the Kabobs: Preheat a grill or grill pan over medium-high heat. Cook the kabobs for about 10-12 minutes, turning occasionally until the meat is cooked through and has a nice char.
- Prepare the Roll Base: Warm the flatbreads slightly to make them more pliable. Spread a generous layer of yogurt or garlic sauce over each flatbread.
- Assemble the Rolls: Place a grilled kabob on each flatbread. Top with shredded lettuce, tomato slices, cucumber, and red onions. Roll the flatbread around the kabob tightly to form a wrap.
- Serve: Secure the rolls with parchment paper or foil if desired and serve immediately while warm.
Notes
- For a spicier kick, add more cayenne pepper or a dash of chili flakes.
- Use ground chicken or turkey as a leaner alternative to lamb or beef.
- You can grill the kabobs indoors using a grill pan or broil them in the oven if a grill is unavailable.
