Description

A refreshing and vibrant Poke Bowl featuring marinated sushi-grade tuna, fresh vegetables, and a savory soy-based dressing served over a bed of steamed rice. This Hawaiian-inspired dish is perfect for a healthy lunch or dinner, offering a delightful combination of textures and flavors.

Ingredients

For the Tuna and Marinade

  • 8 oz sushi-grade tuna, diced into 1/2-inch cubes
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp honey
  • 1 tsp grated fresh ginger
  • 1 garlic clove, minced
  • 1 tbsp chopped green onions
  • 1 tsp toasted sesame seeds

For the Bowl

  • 2 cups cooked short-grain sushi rice, warm
  • 1/2 cup diced cucumber
  • 1/2 cup shredded carrots
  • 1/2 cup edamame, shelled and cooked
  • 1 avocado, sliced
  • 1 sheet nori, sliced thinly
  • Pickled ginger, for garnish
  • Additional sesame seeds and green onions, for garnish

Optional Sauce

  • 2 tbsp mayonnaise
  • 1 tsp sriracha sauce

Instructions

  1. Prepare the Marinade: In a medium bowl, combine the soy sauce, sesame oil, rice vinegar, honey, grated ginger, and minced garlic. Whisk the ingredients together until well mixed to create the marinade.
  2. Marinate the Tuna: Add the diced sushi-grade tuna to the marinade. Gently toss to coat all pieces evenly. Cover the bowl and refrigerate for 15-20 minutes to allow the flavors to infuse.
  3. Cook the Rice: While the tuna marinates, prepare the sushi rice according to package instructions or using a rice cooker to achieve a sticky, tender texture. Keep the rice warm until ready to assemble.
  4. Prepare the Vegetables: Dice the cucumber, shred the carrots, cook and shell the edamame if not pre-cooked, and slice the avocado. Set these aside for assembly.
  5. Mix Optional Sauce: In a small bowl, combine mayonnaise and sriracha to make a spicy sauce. Adjust the sriracha quantity to taste. This step is optional but adds creamy heat to the bowl.
  6. Assemble the Poke Bowl: Divide the warm sushi rice evenly among two bowls. Top each with marinated tuna, diced cucumber, shredded carrots, edamame, avocado slices, and thinly sliced nori. Drizzle with optional spicy mayo if using.
  7. Garnish and Serve: Sprinkle toasted sesame seeds and chopped green onions over the bowls. Add a small amount of pickled ginger on the side for an authentic touch. Serve immediately to enjoy the best freshness and texture.

Notes

  • Use only sushi-grade tuna or other high-quality raw fish sourced from a trusted supplier to ensure safety.
  • For a vegetarian version, replace the tuna with marinated tofu or tempeh cubes.
  • You can customize the bowls by adding other vegetables like radish, seaweed salad, or mango for sweetness.
  • If you prefer a less spicy dish, omit the sriracha from the optional sauce or serve it on the side.
  • Leftover poke can be stored in an airtight container for up to 1 day but is best eaten fresh.
