Description

This Stuffed Grape Leaves recipe features tender grape leaves filled with a flavorful mixture of rice, fresh herbs, and spices, then gently cooked until tender and aromatic. A traditional Mediterranean and Middle Eastern dish, it makes for a delightful appetizer or side dish that is both healthy and satisfying.

Ingredients

For the Filling

  • 1 cup long-grain rice, rinsed
  • 1 small onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp allspice

For the Grape Leaves

  • 1 jar (about 1 cup) grape leaves, rinsed and drained
  • Water, for boiling and cooking
  • Additional lemon slices for layering

Instructions

  1. Prepare the filling: In a large bowl, combine the rinsed rice, chopped onion, parsley, mint, dill, olive oil, lemon juice, salt, pepper, and allspice. Mix thoroughly until well combined.
  2. Prepare the grape leaves: Rinse the grape leaves thoroughly to remove excess brine. If using fresh grape leaves, blanch them in boiling water for 1-2 minutes to soften, then drain and cool slightly.
  3. Stuff the leaves: Place a grape leaf shiny side down on a clean surface. Put about a teaspoon of the filling near the stem end of the leaf. Fold in the sides and roll tightly from the stem end to the tip to form a neat cylinder. Repeat until all filling and leaves are used.
  4. Layer the pot: Line the bottom of a heavy pot with a few grape leaves and lemon slices to prevent sticking and add flavor.
  5. Arrange and cook: Place the stuffed grape leaves seam side down in tight concentric circles in the pot.
  6. Add water and cook: Pour enough water over the stuffed leaves to cover them. Place a heatproof plate on top of the rolls to keep them from unraveling. Cover the pot and simmer gently over low heat for about 45 minutes to 1 hour, or until the rice is tender and leaves are soft.
  7. Serve: Let cool slightly before serving. Stuffed grape leaves can be served warm or at room temperature with a side of yogurt or lemon wedges.

Notes

  • Use firm, tender grape leaves for best results; fresh leaves work well in season.
  • Adjust lemon juice and herbs to taste for more brightness or freshness.
  • For a vegan version, ensure no animal ingredients are added; this recipe is naturally vegan.
  • Leftovers can be stored in the refrigerator for up to 3 days and taste even better the next day.
  • Traditionally served as an appetizer or side dish in Mediterranean and Middle Eastern cuisine.
