Ingredients
For the Filling
- 1 cup long-grain rice, rinsed
- 1 small onion, finely chopped

- Juice of 1 lemon
- 1 tsp salt
- 1/2 tsp black pepper

For the Grape Leaves
- 1 jar (about 1 cup) grape leaves, rinsed and drained
- Water, for boiling and cooking
- Additional lemon slices for layering
Instructions
- Prepare the filling: In a large bowl, combine the rinsed rice, chopped onion, parsley, mint, dill, olive oil, lemon juice, salt, pepper, and allspice. Mix thoroughly until well combined.
- Prepare the grape leaves: Rinse the grape leaves thoroughly to remove excess brine. If using fresh grape leaves, blanch them in boiling water for 1-2 minutes to soften, then drain and cool slightly.
- Stuff the leaves: Place a grape leaf shiny side down on a clean surface. Put about a teaspoon of the filling near the stem end of the leaf. Fold in the sides and roll tightly from the stem end to the tip to form a neat cylinder. Repeat until all filling and leaves are used.
- Layer the pot: Line the bottom of a heavy pot with a few grape leaves and lemon slices to prevent sticking and add flavor.
- Arrange and cook: Place the stuffed grape leaves seam side down in tight concentric circles in the pot.
- Add water and cook: Pour enough water over the stuffed leaves to cover them. Place a heatproof plate on top of the rolls to keep them from unraveling. Cover the pot and simmer gently over low heat for about 45 minutes to 1 hour, or until the rice is tender and leaves are soft.
- Serve: Let cool slightly before serving. Stuffed grape leaves can be served warm or at room temperature with a side of yogurt or lemon wedges.
