Ingredients

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt until well combined.
  3. Combine Wet Ingredients: In a large bowl, beat the eggs. Add the granulated sugar, brown sugar, vegetable oil, and vanilla extract, and mix until smooth and combined.
  4. Add Zucchini: Stir the grated zucchini into the wet mixture until evenly distributed.
  5. Combine Wet and Dry: Gradually fold the dry ingredients into the wet ingredients using a spatula until just combined. Do not overmix to keep muffins tender.
  6. Add Optional Ingredients: If using, gently fold in chopped nuts, raisins, or chocolate chips.
