This Double Dark Chocolate Zucchini Bread is rich, moist, and deeply chocolatey with a soft texture created by fresh zucchini. Filled with dark chocolate chips and warm cocoa flavor, it makes a comforting treat for breakfast, dessert, or snacks.
Ingredients
- 1 1/2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 3/4 cup dark chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a standard loaf pan.
- In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
- In another bowl, mix the eggs, vegetable oil, brown sugar, granulated sugar, and vanilla extract until smooth.
- Stir the wet ingredients into the dry ingredients until just combined.
- Fold in the grated zucchini and dark chocolate chips.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- No need to peel the zucchini because the skin softens during baking.
- Add chopped walnuts or pecans for extra crunch.
- Sprinkle extra chocolate chips on top before baking for a richer finish.
- A teaspoon of espresso powder enhances the chocolate flavor.
- Replace part of the oil with applesauce for a lighter variation.
