Instructions

  1. Prepare the Potatoes and Onion: Peel the potatoes and grate them using a box grater or food processor. Grate the onion as well. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible to ensure crispy pancakes.
  2. Combine Ingredients: In a large mixing bowl, combine the grated potatoes and onion. Add in the eggs, flour, salt, and pepper. Mix everything thoroughly until you have an even batter.
  3. Heat the Oil: Pour about 2 tablespoons of vegetable oil into a large skillet and heat over medium-high heat until shimmering but not smoking.
