Description

These Easy Baked Chicken Meatballs are a perfect healthy and flavorful dinner option. Made with lean ground chicken and simple seasonings, these meatballs bake in the oven to a juicy and tender perfection without any frying. They are great served over pasta, rice, or with your favorite dipping sauce for a quick weeknight meal.

Ingredients

Meatballs:

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, chopped parsley, dried oregano, salt, pepper, and milk. Mix gently with your hands or a spoon until all ingredients are just combined. Avoid overmixing to keep the meatballs tender.
  3. Form Meatballs: Using your hands or a small scoop, form the mixture into 1 to 1.5-inch meatballs and place them evenly spaced on the prepared baking sheet.
  4. Bake: Place the baking sheet in the preheated oven and bake the meatballs for 18-22 minutes, or until they are cooked through and golden on the outside. The internal temperature should reach 165°F (74°C).
  5. Serve: Remove from the oven and let the meatballs rest for a few minutes. Serve warm with your choice of sauce, pasta, or a side salad.

Notes

  • Using ground chicken breast will yield leaner meatballs.
  • Breadcrumbs help keep the meatballs moist and tender.
  • You can substitute fresh herbs like basil for parsley for a different flavor profile.
  • For gluten-free option, use gluten-free breadcrumbs.
  • These meatballs freeze well; cool completely before freezing in an airtight container.
