Ingredients
Mac and Cheese
- 8 oz elbow macaroni
- 2 cups whole milk
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 cup shredded sharp cheddar cheese
- 4 oz Boursin cheese (herb and garlic flavor), softened
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp smoked paprika (optional)
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
- Make Roux: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until it forms a smooth paste and turns slightly golden, making sure it doesn’t brown.
- Add Milk: Gradually whisk in the milk to the roux, continuing to whisk to prevent lumps. Cook and stir until the mixture thickens and coats the back of a spoon, about 5-7 minutes.
- Add Cheeses and Seasoning: Lower the heat and stir in the shredded cheddar cheese and softened Boursin cheese until completely melted and smooth. Add salt, black pepper, garlic powder, onion powder, and smoked paprika if using. Mix well to combine all flavors.
- Combine Pasta and Sauce: Add the cooked and drained macaroni back into the cheese sauce. Stir thoroughly to coat the pasta evenly with the cheesy, herby sauce.
- Serve: Serve the mac and cheese hot as a comforting main dish or side. Optionally, garnish with chopped fresh parsley or extra Boursin crumbs for extra flavor and presentation.
Notes
- Using whole milk helps achieve a creamier sauce, but 2% milk can be substituted if preferred.
- For a thicker sauce, reduce the milk slightly or add a little extra cheese.
- Leftovers keep well in the refrigerator for up to 3 days and reheat nicely on the stovetop or microwave.
- Feel free to customize by adding cooked bacon, sautéed mushrooms, or steamed broccoli for variation.
- If Boursin cheese is unavailable, substitute with cream cheese mixed with minced garlic and herbs.
