Ingredients
- 2 cups grated carrots
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup brown sugar
- 3 eggs
- 3/4 cup vegetable oil
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)
- Cream cheese frosting (optional)
Instructions
- Preheat the oven to 350°F and grease a cake pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat the eggs, sugar, brown sugar, vegetable oil, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and stir until combined.
- Fold in the grated carrots, and add nuts or raisins if using.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before frosting if desired.
- Slice and serve.
